Grenache 60%, Carignan 15%, Syrah 25% - 50hl/ha
Complete destemming of the grape harvest, cold maceration. The
wine-making process starts once the grape varieties have been put
together. The maceration lasts for about 21 days. Maturation
to 12 months- takes place in oak barrels that contain from 40 to 60 hl
(1000-1500 US Gallons).
